Slow-simmered broth, fresh herbs from the market that morning, and recipes my mum carried from Huế. This is home cooking — we just gave it a roof.

The family behind Sen

From a market cart to a Hopkins Street kitchen

My family arrived in Footscray in 1983 with two suitcases and my grandmother's recipe for broth. Mum sold pho from a little cart outside the market — five dollars a bowl, sold out by ten.

I grew up pulling herbs and skimming stock before school. When Mum retired, I couldn't let the recipes go. So in 2014 I reopened Sen in the same neighbourhood, with the same broth that takes twelve hours and refuses to be rushed.

Everything you eat here, we'd serve at our own table. That's the only standard we keep.
